How to Make Your Own PSL Syrup for Less Than $5.

Forget paying extra for a seasonal latte. Here's how you can make a big batch of your own PSL syrup for less than a five-dollar bill.

DIY Pumpkin Spice Syrup: What You'll Need

This recipe focuses on simple, cheap ingredients you can get anywhere. No fancy stuff required.

The Ingredients

Sugar: 1 cup of brown sugar and ½ cup of white sugar. Brown sugar gives it that rich, molasses flavor, but if you only have white sugar, that's fine—just use 1 ½ cups total.

Water: 1 ½ cups.

Pumpkin Purée: About ½ cup. Crucial tip: Make sure you get 100% Pure Pumpkin Purée, not "Pumpkin Pie Filling." The pie filling is already sweetened and spiced and will throw everything off. A standard 15 oz can of purée works perfectly and you'll have extra for another recipe.

Spices: This is where the magic happens. If you have a pre-made "Pumpkin Pie Spice" blend, just use 1 tablespoon. If not, here’s how to make your own with spices you might already have:

1 ½ teaspoons ground cinnamon

½ teaspoon ground nutmeg

½ teaspoon ground ginger

¼ teaspoon ground cloves (or allspice)

How to Make It: The Steps

This will take you about 15 minutes, tops. It’s a one-pot situation.

Step 1: Combine and Dissolve

In a small saucepan, combine the water, brown sugar, and white sugar.

Turn the heat to medium and stir everything together until the sugar is completely dissolved. Don't let it come to a hard boil just yet. You're essentially making a simple syrup base.

Step 2: Add the Good Stuff

Once the sugar is dissolved, whisk in your pumpkin purée until it's smooth. It might look a little grainy or separated at first, but keep whisking.

Add your spices (the cinnamon, nutmeg, ginger, and cloves, or your tablespoon of pumpkin pie spice). Whisk it all together until it's well combined.

Step 3: Simmer It Down

Bring the mixture to a gentle simmer (small bubbles, not a rolling boil).

Reduce the heat to low and let it simmer for about 5-8 minutes. Stir it occasionally. This helps all the flavors meld together and will thicken the syrup slightly. Your whole kitchen is about to smell amazing.

Step 4: Strain (Optional, but Recommended)

Turn off the heat. For a super smooth, coffee-shop-style syrup, you'll want to strain it. The pumpkin purée can give it a slightly pulpy texture.

Place a fine-mesh strainer over a bowl or a large measuring cup and pour the hot syrup through it. Use the back of a spoon to gently press the liquid out of the solids left in the strainer.

If you don't have a fine-mesh strainer, you can use a coffee filter or a couple of layers of cheesecloth. If you don't mind a little texture, you can skip this step entirely!

Step 5: Cool and Store

Let the syrup cool down to room temperature.

Pour it into a clean glass jar, a squeeze bottle, or any airtight container. It will thicken up a bit more as it cools.

Store it in the refrigerator. It will stay good for up to 2 weeks.

How to Use Your Homemade PSL Syrup

You're the barista now.

For a Hot Latte: Add 2-3 tablespoons of your syrup to a mug, pull a shot of espresso (or use ½ cup of very strong coffee), and top with about a cup of steamed, frothed milk.

For an Iced Coffee: Fill a glass with ice. Add your coffee, 2-3 tablespoons of syrup, and top with milk or cream. Stir and enjoy.

Not just for coffee! Drizzle it over pancakes, vanilla ice cream, or even in a bowl of oatmeal.

The Cost Breakdown (Under $5)

15 oz Can of Pumpkin Purée: Typically runs about $1.50 - $2.50 at almost nay grocery store. You only need half the can.

Sugar: A standard 4 lb bag of sugar is a few bucks, so the cup and a half you're using costs well under $1.00. Same goes for brown sugar.

Spices: This is the most variable part. If you need to buy all of them, a store-brand bottle of each spice is usually around $1.00 - $2.00. However, you're using a tiny amount, and these will last you for dozens of other recipes. If you already have them, this part is basically free for this recipe. If you buy a pre-made pumpkin pie spice blend, it's about $2.00.

Total Estimated Cost (if you have to buy a spice or two): Around $4.75
